Hey Guys! How much are you enjoying this summer we’re having? The sun is bright and the weather has been just beautiful!! Baby Jackson has totally been loving the outdoors. Hubby took him outside the other day and enjoyed a quick picnic with him. After a while, Jackson started gazing at the birds flying above, relishing in all of the nature around him. It is so fun watching him grow and to experience the world through his eyes. His spirit just as a sponge, soaking in all of God’s beautiful wonders. Just love that kid!!
HOW TO MAKE MACARONI SALAD
While we’re still enjoying our summer get-togethers with family and friends, I wanted to share another delicious summertime salad. It’s so quick and easy to just throw a salad together for dinner instead of turning the hot oven on. Check out Momma’s Potato Salad and Tex Mex Pasta Salad. Ham and Egg Macaroni Salad
Ingredients
- 2 cups macaroni (or any small pasta shape) boiled in salted water and drained
- 1 c diced ham I used HoneyBaked
- 3 boiled eggs diced
- 2 celery ribs diced
- 1 carrot diced
- 1/2 c diced red pepper
- 1/4 c diced shallots
- 1/4 c sliced green onion
Dressing
- 1/2 c. Marzetti Slaw Dressing
- 1/4 c mayo
- 2 tsp. honey mustard
- 1 tsp Kirkland seasoning
- 1/2 tsp black pepper
- 1/8-1/4 tsp cayenne pepper optional
Instructions
- In a small bowl, whisk all dressing ingredients until well combined. Set aside.
- In a large bowl,combine all other ingredients. Mix well.
- Pour dressing over salad and stir well. Say Grace and enjoy!!
