A lightened up version of a traditional summer pasta salad that’s picnic perfect, great on the waistline yet equally delicious!!
Happy Almost August!!! Where oh where is the summer going?!?!?!?! First, let me thank all who came out to the Say Grace Collective Soft Launch earlier this month as well as the largest popup I’ve ever done to date in The Village of Grosse Pointe. They were both really amazing experiences.
I was overjoyed to get to hug your necks, chat and serve you a delicious coffee, tea or energy beverage along with your pastry of choice. I must say that I was completely overwhelmed by the outpouring of love and encouragement from you all!! We got to pray, sing, laugh out loud, reward your precious pooches with pup cups and dance with your sweet babies!! What a joyous and grand old time had by all!!!
With this whirlwind of a month coming to an end, I wanted to enjoy something easy and light to whip up for dinner. Enter this delicious Summer Pasta salad loaded with chicken, veggies and herbs. The flavors meld so perfectly together that I simply just can’t get enough of it.
Pasta Salad Ingredients
This summer pasta salad recipe is easy and fresh. Here’s what you’ll need to make it:
- Fusilli pasta – Or your pasta of choice! Rotini works well too.
- Kalamata Olives – Salty, winey flavor
- Grape tomatoes – Provides a sweet flavor and a juicy texture
- Charred Grilled Scallions – Add a mellow yet smokey flavor
- Chicken breast– It makes it a complete meal.
- Arugula – For a peppery, nutty flavor.
- Goat cheese – For a rich, tangy flavor.
- Red Onions – Adds a sweet crunch
- And fresh herbs – Parsley AND dill pack this salad with fresh flavor!
