Hey Folks! How have you guys been doing as we continue to navigate life during quarantine?
Our family has been continuing to stay as healthy as possible with good, healthy nutrition, vitamins & supplements and consistent exercise. Walking the block or neighborhood for even 30 minutes counts too!! I truly believe that this is the best thing that we can do in the natural to combat COVID-19.
I’m sure we’ve all had our fair share of time spent cooking during this time so I wanted to share this quick and easy egg salad recipe with you. I love it because it’s so easy to just throw together and it’s ready in like 15 minutes because I use hard boiled eggs in a bag. You can also hard boil them yourself if you so choose.
WHAT DO YOU PUT IN EGG SALAD?
This egg salad recipe is so full of good nutrition. Let’s just say that eggs are like one of nature’s perfect foods. Eggs are loaded with protein and amino acids and have a good bit of Vitamin D, A and zinc which have such great benefits during this challenging time.

Egg Salad Recipe
Ingredients
- 12 hard boiled eggs peeled
- 1/3 c diced celery
- 1/3 c diced red bell pepper
- 1/4 c diced shallots
- 1/3 c mayo I use Avocado mayo
- 1/4 c honey mustard
- 1 T spicy mustard
- 2 T dill relish
- 1/2 tsp Kirkland seasoning
- Healthy pinch of salt
- Healthy pinch of white pepper
- Pinch of cayenne pepper
Instructions
- Diced eggs and place in a medium sized bowl.
- Add remaining ingredients. Combine well.
- Serve over Bibb lettuce and garnish with green onion. Say Grace and enjoy as is or in a sandwich!!
