OMG Guys!! Do you remember those Good Humor classic Strawberry Shortcake Ice Cream Bars that were super popular amongst kids AND adults back in the day. I could never get enough of them. Oftentimes, I would find myself running after the neighborhood ice cream truck like Forest Gump just to get one!!! Run Felesha Run!!!!!! 🙂

These bars are so nostalgic and tasty that they are simply irresistible!!! Growing up, I always choose strawberry desserts like cupcakes, bundt cakes, cheesecakes and even Strawberry Shortcake French Toast over chocolate, which is of course, now my present day favorite.

In fact, do you remember when Baskin Robbins (31 Flavors) used to make a Strawberry Shortcake Ice Cream?!?!?!? Oh man! I was so obsessed that I even made a song out of it!!! “Strawberry Shortcake met this girl, met this girl, met this girl. Strawberry Shortcake met this girl and her name, and her name and her name was Felesha!” See! Obsessed!!! Such a silly gal I (am) was back then. Lol!!

I used Golden Oreos, vanilla ice cream, freeze dried strawberries and even made my own strawberry sorbet from scratch since it’s so tough to find. You can really get creative with this dessert and experiment with lots of different fruit flavors like blueberry, raspberry, peach, cherry, mango and even pineapple!! You might even try experimenting with the chocolate eclair one too if you enjoy chocolate as much as I do!! In fact, I think I’ll try that one next!

Strawberry Shortcake Ice Cream Bars {Good Humor Ice Cream Bars Copycat}

These super popular Golden Oreo covered frozen Strawberry Shortcake Ice Cream dessert bars found on your local ice cream truck are the perfect treat for any season!

Ingredients
  

  • 4 c. vanilla ice cream softened and divided

Crust

  • 20 Golden Oreo cookies crushed
  • 3 T. melted butter

Strawberry Sorbet:

  • 16 oz frozen strawberries
  • 1 lemon juiced
  • 1/4 c. honey
  • 2 T. water

Crumbled Topping:

  • 10 Golden Oreo cookies crushed
  • 1 T. butter softened
  • 1 c. sliced freeze-dried strawberries crushed fine

Instructions
 

Strawberry Sorbet

  • Place the frozen strawberries, honey, lemon juice and water in blender and blend until smooth. Place in the freezer to firm up while you make the cookie crust.

Cookie Crust

  • Line an 8 x 8 square baking dish with parchment or wax paper leaving an overhang to remove the bars easily. Set aside.
  • Using a food processor, add the 20 cookies and pulse into crumbs. Add the melted butter and stir until combined well. Press mixture into the bottom of the lined baking dish. Place in freezer for about 20 minutes to set.

Crumble Topping

  • Using a food processor, add the 10 cookies and crush into large crumbs. Mix with softened butter and with freeze-dried strawberry powder. Set aside.

Assembly

  • Scoop 2 cups of vanilla ice cream over the cookie crust and spread evenly using an offset spatula.
  • Place pan in freezer to harden slightly for about 15 minutes.
  • Next, spread the strawberry sorbet over the vanilla ice cream layer evenly. Again, place pan in freezer for 15 minutes. Add the final layer of vanilla ice cream evenly over the sorbet.
  • Sprinkle the strawberry cookie crumbs evenly over the bars. Place in the freezer for a minimum of 4 hours.
  • Lift out of pan using the parchment paper overhang. Using a very sharp knife, cut into 16 squares. Store bars in freezer inside of an air tight container until ready to serve. Say Grace and enjoy!
