Naughty Coal Cookies

Happy 5 Days Before Christmas!!! I’m so excited to have my entire side of the family as house guests for the next couple weeks!! I thought I’d have a little fun this year and share these yummy Naughty Coal Cookies. If you know my family then you know that everyone of them deserves a lump of coal every now and then. Lol!! We are such jokesters and we always have an amazing, hilarious time together. No drama included.

These naughty coal lumps are actually chewy dark chocolate brownie-like cookies rolled in black sanding sugar. The black sanding sugar really gives that naughty coal lump effect!! They almost look like someone left them in the oven way too long. They are super delicious once you get past the prank of it all!!  Note: Tell your recipients to enjoy these lumps at home as they may need a toothbrush after eating them. 🙂

I found the cutest mini stockings at Joann’s which fit these cookies perfectly. I also decided to make little burlap sacks as well for the really naughty ones. Lol!!! Print out these cute labels here from Doodlecraft.

Naughty Coal Cookies Recipe {Fun Stocking Stuffer}

These yummy dark chocolate brownies disguised as naughty coal are sure to bring much delight to even the naughtiest recipient!! 🙂

Ingredients

  • 1 stick unsalted butter softened
  • 1/2 cup sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1/2 cup + 2 T. Dutch processed cocoa powder
  • 1 teaspoon espresso powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon kosher salt
  • 2 Tablespoons milk
  • 1/2 cup bittersweet chocolate chips
  • 1/2 cup semi sweet chocolate chips
  • 1/2 cup chopped walnuts or pecans optional
  • black sanding sugar for rolling

Instructions

  • In a large bowl using a stand mixer fitted with a paddle attachment, beat the butter for a minute on medium speed until creamy. Add the sugars and beat on medium high speed until fluffy.  Add the egg and vanilla on high speed. 
  • In a large bowl, sift the flour, cocoa powder, espresso powder, baking soda and salt together until combined.  Slowly mix the dry ingredients into the wet ingredients until combined. Beat in milk on high speed, then the chocolate chips and nuts. Cover dough tightly with plastic wrap and chill overnight. 
  • Remove cookie dough from the refrigerator and allow to sit at room temperature for 30 minutes
  • Preheat oven to 350 degrees. Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
  • Scoop and roll balls of dough, about 2 Tablespoons of dough each, into balls and roll in sanding sanding sugar until completely covered. Place on the baking sheets.
  • Bake for 10 minutes. Allow to cool for 1 minute on the cookie sheet and then smush them to resemble coal covering with more sanding sugar if needed. Transfer to cooling rack to cool.
  • Package in treat bags,  burlap sacks and/or Christmas stockings. Say Grace and enjoy!!
