This Hot Tamale Pie dish incorporates all of the traditional tamale flavors without all of the added effort. Perfect for busy weeknights!!

Traditional tamale making. How dreadful!!! Such a long and daunting process. Traditionally, several family members get together and make hundreds of them at a time and then freeze them to enjoy over the next several months.

They were so time consuming that many only enjoyed them only for special occasions and during the holidays. WHAT?!?! It was a reason for families to gather together and talk as they prepared them since they were such arduous work.

HOW TO MAKE HOT TAMALE PIE

So I say why bother with all the work when you can easily make this Hot Tamale Pie in a jiffy!!! I love it so much that I make it quite often. After all, I’m a true Tex-Mex fan!!! This Hot Tamale Pie is so good, you won’t mind skipping the traditional method of tamale making because it mimics the flavor of tamales so beautifully without all of the effort.

This crowd pleaser is ready in under an hour to boot!! A no-brainer for those hurried week night meals!!! This Hot Tamale Pie satisfies the Tex-Mex Foodie Lover in me and the hubby’s palate for good ole comfort food!! It’s got a little bit of a kick to it and best of all, it’s ready in 1 hour!!! SCORE for those busy families on the go out there, right?!?!?!

This Hot Tamale Pie is so tasty that I needed to be rescued from it. I kept going back for seconds, thirds and even fourths, guys!! I LOVE it just that much. In fact, I’m dreaming about acquainting with it again as I’m typing this post. 🙂 I just can’t get enough of it and I think you will agree. I suggest that you LOVE on it tonight because it’s just that yummy!!

Speaking of love…in case you didn’t know. I thought I’d leave you with a scripture that encompasses a love like no other. This passage has certainly been life-changing for me…eternally! “For God so [greatly] loved and dearly prized the world, that He[even] gave His [One and] only begotten Son, so that whoever believes and trusts in Him [as Savior] shall not perish, but have eternal life. John 3:16 (AMP). It’s almost unbelievable when you think about the amount of love that He has for us, yet He wants us to understand its height, depth, width and breadth of His love. Yes! He sent His only Son, Jesus to the cross because He loved us all just that much! Have you met Him? Say Grace and enjoy!!

Ingredients
  

  • 1 T butter at room temperature
  • 1 T olive oil
  • 1 lb. ground beef
  • 1 medium sweet onion diced
  • 1 red bell pepper diced
  • 2 garlic cloves minced
  • 1 Say Grace Taco Seasoning
  • 1 15-ounce can pinto beans, drained and rinsed
  • 1 8-ounce can diced tomatoes
  • 2 chipotle chiles plus 1 teaspoon adobo sauce, from can chipotle in adobo
  • 1 c grated Cheddar
  • 1 8.5-ounce package cornbread mix
  • 1 egg
  • 1/3 c milk

Instructions
 

  • Preheat oven to 400 degrees F.
  • Grease an 9-inch baking dish with the butter and set it aside.
  • Add the ground beef, onions, peppers, and garlic and cook until the beef is no longer pink and is cooked through, about 8 minutes. Drain off any excess fat and sprinkle the meat mixture with the taco seasoning.
  • Add the beans, tomatoes, chiles and adobo sauce to the skillet and bring to a boil over high heat. Reduce the heat to medium and simmer until heated through and slightly thickened, about 5 minutes. Remove pan from the heat and stir in the cheese.
  • Spread the beef mixture in the prepared baking dish, pressing down on it with the back of a spoon to make an even layer.
  • Combine the cornbread mix with milk and egg. Spread the cornbread batter over the meat mixture and bake until the cornbread is golden-brown, 20 to 25 minutes. Let the hot tamale pie stand for 5 minutes before cutting into squares and serving. Say Grace and enjoy!

Notes

If you prefer more heat, you can chop up the chipotle chiles before putting in the dish. Otherwise, leave them whole and they’ll be a nice surprise in two of your servings. You can also just remove them completely after the dish has simmered in Step 4 if you’re really concerned about heat.
