This fun tater tot twist on traditional nachos with all the fixins' is sure to please all of your game day guests!!

Hey Folks!!! Ok, so the bottom fell out. Thank God for the convenience of my fitbit to keep my health goals in check!! Gotta make concessions for the Super Bowl, right? You know how much of a Tex-Mex Foodie Lover I am.  So I am so uber excited to tell you about these yummy Totchos!! Totchos??? Yes, tater tots plus all of the nacho fixins’ = TOTCHOS!!!  Who doesn’t love a tater tot? I absolutely loved tater tots growing up as they are so kid friendly. These Spicy Totchos {Tater Tot Nachos} are great for your upcoming Super Bowl parties. Who are you behind by the way? The Atlanta Falcons or The New England Patriots? Remember, I already mentioned that we’re for the Falcons this Sunday. Hubby doesn’t seem to care for The Patriots due to their lack of integrity in the past so The Falcons it is!! Go Falcons!!

Speaking of good character and integrity, Colossians 3:23-24 (KJV) reads “And whatsoever ye do, do it heartily, as to the Lord, and not unto men; Knowing that of the Lord ye shall receive the reward of the inheritance: for ye serve the Lord Christ.” Paul encourages us to operate in honesty and integrity as God would have us to do. Yes, even in the little things like not removing that pen from the office or putting that box of cereal back to place you pulled it from in the grocery store before you changed your mind on it. Operating in integrity and excellence is one of the keys to living a life of prosperity. I don’t know about you but I’ll take prosperity in every area of my life for the win!  Amen? Spicy Totchos {Tater Tot Nachos}

Ingredients
  

  • 28 oz. bag tater tots
  • 1 lb. lean ground beef
  • 1 large onion diced
  • 1 jalapeno seeded and chopped
  • 1 Taco Seasoning Packet or make your own here
  • 1 can diced tomatoes with chiles drained
  • 1 can diced chiles
  • 1 c. frozen corn
  • 1 can black or pinto beans
  • Cheese Sauce
  • 3 T. butter
  • 3 T. flour
  • 1 c. whole milk
  • 1 c. chicken stock
  • hot sauce optional to taste
  • 2 cups of a four cheese Mexican blend or hot blend
  • 1/4 c. pickled jalapenos chopped (optional)
  • kosher salt to taste
  • pepper to taste
  • salsa garnish
  • guacamole garnish
  • crema garnish
  • diced tomatoes garnish
  • jalapenos optional garnish
  • scallions garnish
  • hot sauce garnish

Instructions
 

  • Bake or fry your tater tots according to package instructions.
  • Over med-high heat, place ground beef, onion, and jalapeno in a large pan breaking the meat up with a wooden spatula until it browns and the onions and peppers soften, about 10 minutes.
  • Drain the mixture and taco packet or taco seasoning mixture.
  • add diced tomatoes with chiles, more chiles, frozen corn and beans.
  • Reduce your heat and simmer for about 10 minutes.
  • Make the cheese sauce - In a medium pot, add 3 T. of butter. Melt over medium to high heat, and add 3 T. of flour and cook it for about a minute.
  • Whisk in milk, chicken stock and bring it to a boil.
  • Wait for the mixture to thicken and remove the pot from the heat and add in cheese mixture and mix well.
  • Salt and pepper cheese sauce to taste. Add in dashes of hot sauce and chopped pickled jalapeno here if desired.
  • Plate tater tots and top with a couple scoops of meat mixture.
  • Pour cheese sauce over each serving.
  • Garnish with salsa, crema, guacamole, chopped tomatoes, scallions, jalapenos and hot sauce. Say Grace and enjoy!!
