Taco Seasoning Packet
or make your own here

can diced tomatoes with chiles
drained
1
can diced chiles

frozen corn

can black or pinto beans
Cheese Sauce

T.
butter

flour

c.
whole milk

c.
chicken stock
hot sauce
optional to taste

of a four cheese Mexican blend or hot blend

chopped (optional)

Instructions
Bake or fry your tater tots according to package instructions.
Over med-high heat, place ground beef, onion, and jalapeno in a large pan breaking the meat up with a wooden spatula until it browns and the onions and peppers soften, about 10 minutes.
Drain the mixture and taco packet or
taco seasoning mixture
.
add diced tomatoes with chiles, more chiles, frozen corn and beans.
Reduce your heat and simmer for about 10 minutes.
Make the cheese sauce - In a medium pot, add 3 T. of butter. Melt over medium to high heat, and add 3 T. of flour and cook it for about a minute.
Whisk in milk, chicken stock and bring it to a boil.
Wait for the mixture to thicken and remove the pot from the heat and add in cheese mixture and mix well.
Salt and pepper cheese sauce to taste. Add in dashes of hot sauce and chopped pickled jalapeno here if desired.
Plate tater tots and top with a couple scoops of meat mixture.
Pour cheese sauce over each serving.
Garnish with salsa, crema, guacamole, chopped tomatoes, scallions, jalapenos and hot sauce. Say Grace and enjoy!!
