Hey Guys!!! How was your 4th of July holiday? I actually didn’t cook much because I’ve been having challenges with keeping my fasting glucose levels in check during this pregnancy. I made hubby some Mighty Tender Beef Ribs and I enjoyed the only thing along with walking four miles per day that seems to keep my fasting blood sugar down, Fat Head Pizza.
What is Fat Head Pizza you may ask? It’s basically a low carb, gluten free, grain free yummy pizza crust. I’ve tried the cauliflower route before and this fat head pizza crust is miles ahead in taste, sturdiness and ease. It comes together super fast too!!!
How To Make Fat Head Pizza Crust
I decided to make a Bacon Cheeseburger Fat Head Pizza and hubby and daddy actually loved it too!! I can actually only enjoy 2 slices of this Fat Head Pizza before I’m super full!! What a difference between Fat Head pizza and the other higher card options where I need at least four slices!!! For those who don’t even care to go low carb, you will still love this pizza. Fat Head Pizza {Low Carb, Gluten Free, Keto}
Ingredients
- 3/4 c. almond meal/flour
- 1 and 3/4 cups mozzarella cheese shredded
- 2 T. cream cheese
- 1 egg
- pinch of salt
- 1/2 teaspoon Italian seasoning optional
- Desired Toppings
Instructions
- Combine almond flour, mozzarella cheese and cream cheese in a microwave safe bowl. Cook for one minute in microwave. Stir, and cook for additional 30 seconds in the microwave.
- Mix in egg, salt, and Italian seasoning (if using), and stir.
- Shape dough into a ball and place between two pieces of parchment
- Use a rolling pin on top of parchment paper to roll dough into a circle
- Remove the top parchment paper and slide dough onto a baking sheet or pizza stone with parchment underneath. Poke holes all over pizza with a fork to avoid bubbling. Bake at 425 degrees in the oven for 12-14 minutes until browned on top. For a more sturdy pizza, flip dough over at the halfway mark.
- Add any desired pizza sauce and cooked toppings. Continue cooking in oven for 5 minutes until cheese melts and heated through.
