This Curried Chicken Salad Recipe is loaded with roasted chicken, mango chutney, currants, green onions, toasted almonds and comes really close to the Whole Foods Chicken Salad original.
I stopped by Whole Foods the other day for lunch. I love their cold counter but in my efforts to find something that was on the lower carb side I decided to go for their popular curried whole foods chicken salad. It’s so popular that it was nearly gone. I used to enjoy their curried chicken salad all the time years ago…no idea why I ever stopped!! It’s so hard to put the fork down and I’ve always wanted to copycat my own version of their curried chicken salad recipe so here was my big chance.
The Whole Foods Curried Chicken Salad recipe is so easy to replicate given that they list all of their ingredients on their labels. I just came up with my own measurements and boy that this curry chicken salad recipe not disappoint! I left hubby a plate of it in the fridge and he text me stating whatever that dish is that you left in the fridge…it was sooo good!! Lol!! So there you have it, the perfect Whole Foods Chicken Salad. It was a winner for hubby as well as Momma and Daddy.

Curried Chicken Salad Recipe {Whole Foods Copycat}
Ingredients
- 1.25 lb. boneless skinless chicken thighs
- extra virgin olive oil
- kosher salt
- pepper
- 1/2 c. mayo
- 1/4 c. mango chutney
- 2 T. black currants
- 1 green onion sliced (plus more for garnish)
- 1/4 c. almonds toasted (plus more for garnish)
- 2 T. curry powder
Instructions
- Preheat oven to 400 degrees. Place chicken thighs on a baking sheet, drizzle with extra virgin olive oil and sprinkle both sides of the meat with salt and pepper.
- Roast for 20 minutes or until juices run clear in thighs. Allow to cool.
- Slice chicken thighs into small chunks and place in a medium bowl.
- Add remaining ingredients and mix well. Garnish with almonds and green onions. Say Grace and enjoy!

Hi , I made this exact recipe with Tofurky chik’n pieces and just mayo. It turned out fabulously. I also didn’t have green onion so I subbed in shallots and added an apple because I love the crunch. Great recipe, I never would have thought to add Mango Chutney!!

I tried this recipe yesterday. OMG. Taste just like the real thing! I shredded my chicken instead of cubing the meat, makes it easier to eat in a sandwich. I also added some cilantro and celery. So good. Thinking you can serve over lettuce or rice. Thanks again for sharing!

Sounds great! Two questions…..why chicken thighs and not chicken breasts? Thighs dont cut into chunks all that well…

Hi Carol! I used chicken thighs to keep things moist and succulent. You are welcome to use breasts but be sure to roast them with the bone in and skin on to keep things juicy. Remove the skin and bones after roasting. Be sure to let me know how it turns out for you. Enjoy!

The two local WF I shop use apricot slices or glaze and walnuts, cilantro, garlic, ginger and Garam Masala. No mango or pecans. At times they add vinegar and ruin the flavor. Unfortunately, their website doesn’t have the recipe.

This tastes even better than the Whole Foods version and certainly cheaper! I’ve used a whole chicken and just chicken breasts before and it turns out amazing every time. I started making a simple mango chutney from scratch and that just takes it to the next level. I also add fresh cilantro and serrano pepper for an extra kick, however the recipe is DELICIOUS as is. I personally don’t like mayo that much so I only use a few tablespoons and it’s perfect for me. Thank you for sharing this recipe. Everyone I make it for loves it! I have been using it for 2+ years.

I love the whole foods version but dont love that its all mayo. Using your copycat version i substituted half or more of the mayo with plain nonfat greek yogurt. My husband cant even tell and a great way to eat healthy and yummy food! Thanks!

Thank you for pirating this recipe. I used to crave this salad when I lived in Austin Texas. Whole Foods in Seattle does not seem to carry it. I tried this a few weeks again with what I had on hand substituting Mango Chutney with Orange Marmalade and added ginger and few pepper flakes to increase heat and decrease sweet. It was good and This week, I found Mango Chutney at the store and made according to the recipe. Yes. These are the flavors I remember. Thanks again for experimenting and sharing.

Delicious! I used a peach/mango chutney and added a bit more. I also couldn’t find currants and substituted with golden raisins instead. So good! Can’t afford to buy it at the Whole Paycheck store anymore! It’s $17.99 a pound!!!

Delicious! I have to watch spices, so I toned it down a bit. Added shredded carrots, used golden raisins and chopped celery in addition to ingredients in recipe. I’ll be making this again!
