I’m drooling over these stuffed Lotus Biscoff Cookie Butter Pancake Poppers drenched in cookie butter syrup and topped with cookie crumbs, toasted pecans and whipped cream!!!

{Singing} Do you know what today is? It’s my Blogiversay, Blogiversary!! It’s pretty hard to believe that it’s been another year and that Say Grace is actually turning 2. I wanted to celebrate with one of my favorites, Lotus Biscoff Cookie Butter Pancake Poppers!!!

What is Lotus Biscoff Cookie Butter you might ask? Well, have you ever been on a flight where they served those yummy caramelized flavored individual cookies? Well, it’s those speculoos cookies ground up that makes a Cookie Butter spread!!! Just like peanut butter comes from ground up peanuts. There. You get the idea!!

I made these using an aebelskiver/ebelskiver pan just like when I guest posted with these Lemon Blueberry Pancake Poppers over at Gather for Bread. These ebelskiver pans are so much fun to use and they are totally a kid friendly breakfast treat. The stuffing ideas are endless so get creative with this pan.

Ok…so now back to these delicious Lotus Biscoff Cookie Butter Pancake Poppers!! Since IHOP’s National Pancake Day (March 7th) is just around the corner, these will be the perfect way to celebrate! Now traditional ebelskivers are made with egg whites and require a special turning technique so I’m keeping it simple with just a quick flip.

These tender Lotus Biscoff Cookie Butter Pancake Poppers are drenched in cookie butter syrup and topped with Lotus Biscoff Cookie crumbs, toasted pecans and whipped cream!!! I can’t stop drooling over these babies!! They are such a big hit with the whole family that I made them two weekends in a row!!!

Ingredients
  

  • Pancake Poppers
  • 1.5 c. + 1 T. cake flour
  • 1.5 tsp. baking powder
  • 1 T. sugar
  • 1/4 tsp. kosher salt
  • 1 c. milk
  • 1 egg beaten
  • 1/5 tsp. vanilla extract
  • 2 T. butter melted
  • 6 T. Lotus Biscoff Cookie Butter for stuffing
  • Cookie Butter Syrup
  • 1/4 c. pure maple syrup
  • 2 T. Lotus Biscoff cookie butter melted
  • Toasted chopped pecans garnish
  • Crushed Lotus Biscoff Cookies garnish
  • Whipped Cream garnish

Instructions
 

  • Cookie Butter Syrup - Mix melted cookie butter in with maple syrup. Set aside.
  • Poppers - In a medium bowl, whisk cake flour, salt, baking powder, and sugar.
  • In a small bowl, combine milk, egg, and vanilla. Whisk until combined.
  • Pour wet mixture into dry ingredients. Stir to combine without over mixing. Pour in melted butter and combine.
  • While allowing the batter to rise, heat ebelskiver pan over medium-high heat.
  • Brush cavities with melted butter.
  • Fill each cavity ¾ full with batter and top with 1 tsp. cookie butter
  • Top with a wee bit of batter to cover cookie butter. Cook for one minute or until nicely browned.
  • Flip the poppers over using two 2 wooden skewers and cook for another 1.5 minutes or until browned.
  • Serve poppers with cookie butter syrup, crushed Biscoff cookies, toasted pecans and whipped cream. Say Grace and enjoy!!
