Happy August, Guys! How’s your summer going? It’s just flying by for us. Hubby and I have got to find a way to carve out some time for a vacay before the summer ends. It’s definitely time for some good ole’ R&R! Sometimes I feel like we’re on a human hamster wheel just a runnin’ and runnin’!! It’s just that endless!!! We all need a little refresher every now and then, right? Otherwise, you know what comes next? BURNOUT!!!
Speaking of BURNOUT….we actually had another storm and lost power AGAIN this weekend!! We were out for over 24 hours and I had to whip up something for dinner that wouldn’t actually require an oven AGAIN!! I decided to make this delicious Balsamic Watermelon & Kale Salad. It’s such a refreshing combination of summer sweet watermelon, tender baby kale, tangy goat cheese, crunchy walnuts and a balsamic reduction. Y-U-M-M-Y!!! I remembered my trusty Butane Gas Camp Stove (you know the one that I use to make my videos). As you can see, these are great for emergency preparedness!!! It was right on time! I used it to thicken my balsamic vinegar to make the reduction for this refreshing Balsamic Watermelon & Kale Salad.

This refreshing Balsamic Watermelon & Kale Salad reminds me of exactly where I need to be, which is spending more time in God’s presence where there is rest for the weary and fullness of joy! Balsamic Watermelon & Kale Salad
Ingredients
- 3 c. cubed watermelon
- 10 oz. baby kale
- 2 oz. goat cheese crumbled
- 1/2 c. walnuts toasted if you have power 🙂
- 1 c. red balsamic vinegar
Instructions
- Bring the balsamic vinegar to a boil in a small saucepan over medium-high heat.
- After it comes to a boil , lower the heat to a simmer for about 10 minutes or until thickened. Remove from heat and allow to cool. Reduction will become thicker as it sits.
- Toss watermelon,kale, goat cheese and walnuts with balsamic reduction in a large bowl. Say Grace and enjoy!!
