“It’s great! It tastes just like potted meat!” {Hubby’s response when I shoveled a scoop of this yummy Roasted Garlic & Rosemary White Bean Dip Recipe into his mouth.} Then Daddy came by later and said the exact same thing. He then told Momma about it and she said I love potted meat!!! What is going on???
Potted Meat?!?!?! What is that anyway?!?!?!? Sounds so gross and there is no meat anywhere near this vegan appetizer. I was almost offended and saddened by their response at my said deliciousness. How could anything I make tastes like something processed out of a can?!?!? 🙁 Lol! The label actually reads, “Mechanically separated chicken and beef tripe”!!! Yikes! And loads of fillers to boot!! I’ve never tried potted meat and don’t think I want to start now but this Roasted Garlic & Rosemary White Bean Dip Recipe is on point!! FYI…Momma redeemed me and said that it was nothing like potted meat but rather a very flavorful bean dip! Yeaaa!!!
Speaking of offense…I know I have several opportunities to be offended daily. The enemy uses this tactic to steal our peace and God’s blessings. According to Galatians 5:22-23, God has given us self control to help us with our responses to other’s behaviors. Intentional or not. Now I know that Hubby and Daddy didn’t intentionally try to hurt my feelings but I almost went there. I encourage you to choose to forgive and let it go so that you can heal much faster than letting offense grow and intensify. Roasted Garlic & Rosemary White Bean Dip Recipe {Vegan}
Ingredients
- 1 garlic bulb
- Extra virgin olive oil for drizzling
- Kosher salt for sprinkling
- 2 15 oz. cans organic Cannellini beans, drained
- 1/2 tsp. kosher salt or more for taste
- 1/4 c. extra virgin olive oil
- 1 rosemary spring thick stem removed
- 1/8 tsp. cayenne
- Pine nuts garnish
Instructions
- Preheat oven to 400 degrees.
- Slice top off of entire garlic bulb and place on a sheet of foil. Drizzle with olive oil and salt. Wrap foil around the entire bulb creating a pouch. Place in the oven and roast for 35 minutes.
- Squish all of the roasted garlic into a food processor and combine with remaining ingredients.
- Process ingredients until desired consistency is reached. Taste for salt and add more if desired.
- Transfer to a serving dish and garnish with olive oil and pine nuts. Say Grace and enjoy!

White bean hummus is my absolute favorite over chickpea hummus. I have never added rosemary though must try! And these pictures <3
