Slice top off of entire garlic bulb and place on a sheet of foil. Drizzle with olive oil and salt. Wrap foil around the entire bulb creating a pouch. Place in the oven and roast for 35 minutes.
Squish all of the roasted garlic into a food processor and combine with remaining ingredients.
Process ingredients until desired consistency is reached. Taste for salt and add more if desired.
Transfer to a serving dish and garnish with olive oil and pine nuts. Say Grace and enjoy!
