French baguette slices soaked in a peach flavored custard topped with peaches & a peach cobbler pecan streusel will be a winner at your next Sunday Brunch!

Happy Wednesday Folks!! Has anyone else noticed how incredibly sweet the peaches have been this year???? They practically taste like candy to me but I guess that could be because I haven’t been eating much sugar lately.

A friend posted some great looking peaches on social media and I couldn’t help but think about Peach Cobbler…in breakfast form!! Who doesn’t love dessert for breakfast disguised as French Toast. {Tee hee hee}

This yummy Peach Cobbler French Toast Casserole is one of hubby’s favorites and he says is even better the next day. In fact, he thinks that everyone around him should experience it’s deliciousness. The whole entire family enjoyed it actually!!

HOW TO MAKE PEACH COBBLER FRENCH TOAST CASSEROLE

This Peach Cobbler French Toast Casserole is so easy to toss together the night before you plan to serve it. The peach flavored custard gets soaked up in the sweet & buttery baguette slices overnight and then about an hour before you’re ready to serve, it gets topped with canned peaches and a fabulous peach cobbler pecan streusel. You might also try simmering fresh peaches beforehand as well but I wanted to keep things quick and simple.

Did you let it get you down and even fall into discouragement? Let’s chose to take our eyes off of it and surrender to God’s plan and His promises for our lives.

What has God said about your situation? What has He promised you? Study His Word and allow His Spirit to fill you with hope of the future to come! One of my favorite scriptures always brings about a peace for whatever I’m facing at the moment. It states, 11 For I know the plans I have for you,” says the Lord. “They are plans for good and not for disaster, to give you a future and a hope. – Jeremiah 29:11 (NLT). Remember that God’s plan is ALWAYS best! Say Grace and enjoy!

Peach Cobbler French Toast Casserole

Ingredients
  

  • 3/4 c packed brown sugar
  • 1 stick butter
  • 2 T. light corn syrup
  • 1 16 oz. French Bread loaf sliced
  • 2 15 oz. cans sliced peaches in own juice
  • 1 c. milk
  • 1 c. half & half
  • 1/2 c. peach juice from one of the cans
  • 6 eggs
  • 1 tsp. cinnamon
  • 1 tsp. Say Grace Vanilla Extract
  • 1 dash salt

STREUSEL TOPPING

  • 1 stick butter softened
  • 3/4 c. packed brown sugar
  • 2/3 c. flour
  • 1/2 tsp. cinnamon
  • 3/4 c. chopped pecans

Instructions
 

  • In a small saucepan over medium heat, combine brown sugar, butter, and light corn syrup stirring frequently. Pour mixture into a buttered 9×13 inch dish.
  • Drag bread slices through brown sugar mixture. Arrange and overlap slices in the baking dish.
  • Arrange peaches evenly over the bread slices.
  • In a medium bowl, combine milk, half & half, peach juice, eggs, cinnamon, vanilla extract and salt. Whisk until blended. Pour mixture over sliced peaches and bread slices.
  • Cover and refrigerate overnight.
  • When ready to bake, make sure that most of the custard is absorbed (depends on the freshness of your loaf). If not pour some of it off so there is a thin layer of custard in the bottom of the dish. It should not be swimming.

STREUSEL RECIPE

  • Combine all of the streusel ingredients in a small bowl until combined well. Sprinkle evenly over bread. Bake at 350 degrees for 1 hour and completely puffed. Say Grace and enjoy immediately!
