Ughhhhh. I’ve gained so much weight from breastfeeding and now that I’m done with all that pumping and using up extra calories, I’ve blown up like a pufferfish. I looked at pictures from Jackson’s 1 year birthday party a couple weeks ago and decided that I’ve got to make some changes.
This delicious Superfood Salad is not only tasty but it’s loaded with nutrient dense foods that help our bodies run a just a little bit better. I frequent a grocer called Dale’s Natural Foods and they feature this Superfood Salad daily. I have fallen so completely in love with it that I developed this recipe so that I can enjoy it more often at home.
Healthy Superfood Salad
This Superfood Salad is loaded with quinoa, red cabbage, spinach, blueberries, Brazil nuts, avocado and carrots. It then gets a lightly coated in a tasty maple vinaigrette. The whole family enjoyed it so much that we even had some for breakfast. Go figure!!! Such a great start to the day. Lol!

Superfood Salad Recipe
Ingredients
- 1 1/2 c. cooked quinoa
- 3 c shredded red cabbage
- 8 c spinach
- 2 c blueberries
- 1/2 c chopped Brazil nuts
- 1 avocado diced
- 1 large carrot shredded
Maple Vinaigrette
- 1/4 c extra virgin olive oil
- 1/4 c pure maple syrup
- 1 garlic clove minced
- 1-2 T apple cider vinegar
- 1/4 tsp kosher salt
- 1/4 tsp coarse ground pepper
Instructions
- Make the salad dressing by whisking all the wet ingredients including the salt and pepper. Set aside.
- Toss all vegetables and fruit into a large salad bowl. Pour dressing over and mix well. Say Grace and enjoy!!
