This Salted Caramel Rice Pudding Recipe is creamy, buttery and simply delicious.
It’s already August 9th and I just realized that I haven’t posted a single dessert recipe since my March 29th post, Paleo Chocolate Chip Cookies. Wow! That’s a super long time for me! I thought I’d make a National Rice Pudding Day exception and post one of hubby’s favorite desserts with this salted caramel rice pudding recipe. I may have even enjoyed a bite or two. 🙂
When hubby and I were courting, he told me that this was one of his favorite desserts. Of course, I had to make it for him to prove that I could make the best. I served it in a crispy flour tortilla shell and topped it with raspberries blueberries, blackberries and I believe strawberries. Someone in the family even asked what are you making him, rice pudding or a fruit salad? Lol!! I really wanted to impress him for sure.
Turns out that he really wasn’t impressed at all. He remembered a creamier texture and a more buttery flavor growing up. Years later, he really enjoyed it when I made this Salted Caramel Rice Pudding Recipe. This Salted Caramel Rice Pudding Recipe uses sweetened condensed milk to create the creamier texture and my delicious Salted Caramel Goodness provides that buttery flavor that he remembers. SCORE!!! Of course, I had to add roasted pecans like I always do and the bananas were a nice touch as well.
I mentioned earlier that I wanted to impress hubby. I know that many of us struggle with the need to impress people for whatever reason and this can create opportunities for bondage. However, true freedom occurs when we take our eyes off the need to impress people and focus on how we can please the Lord in everything that we do. Colossians 3:17 states “And whatsoever ye do in word or deed, do all in the name of the Lord Jesus, giving thanks to God and the Father by him.” (KJV). Say Grace and enjoy!!
Salted Caramel Rice Pudding Recipe
Ingredients
- 1/2 c. currants
- 1 egg beaten
- 1 T. Say Grace Vanilla Extract
- 1 c. medium grain white rice
- 2 c. water
- 2 c. whole milk
- 2 T. heavy whipping cream
- 1 T. butter
- pinch of salt
- 1 1/4 c. sweetened condensed milk
- 1/8 tsp. cinnamon
- 1/8 tsp. nutmeg
- 1 T. Say Grace Vanilla Extract
- Salted Caramel Goodness
- 1/2 c. roasted pecans garnish
- 2 sliced bananas garnish (optional)
Instructions
- In a small bowl, combine the raisins, beaten egg and vanilla. Set aside for 1 hour.
- In a medium nonstick pot, combine the rice, water, milk, whipping cream, butter, and salt.
- Gently boil over medium high heat, then cover the pot, reduce to low, and simmer for 20 minutes, stirring occasionally.
- Remove the pot from the stove and add the sweetened condensed milk, cinnamon, nutmeg, and vanilla.
- Add beaten egg raisin vanilla mixture.
- Serve immediately with salted caramel, pecans and bananas.

Rice Pudding is one of my all time favorite desserts, because it reminds me of my grandmother, who made the best I’ve ever had. Your rice pudding looks amazing, and though I know it won’t be the same, as my grandmother’s, will certainly be a welcome addition to my file of Unique Desserts. Thanks for posting it.
