An ooey gooey pumpkin cheesecake nestled over a moist spice crust gets drenched in my trusty salted caramel goodness and sprinkled with yummy toasted pecans.

Happy October, Guys!! Where has the year gone?!?! It’s so hard to believe that 2017 is literally right around the corner. And now that pumpkin season is upon us, I thought I’d put the one pumpkin dessert that my family actually loves and raves over. Remember, that we’re really sweet potato lovers at heart which is why there are like a gazillion of ’em on here. From Sweet Potato Pecan Pie to Sweet Potato French Toast to Sweet Potato Muffins to Sweet Potato Pecan Pancakes to Salted Caramel Sweetie Buns, I’ve definitely got you covered on the sweet potato front. 🙂

Nonetheless, for my pumpkin lovers, here’s a yummy recipe for Salted Caramel Pumpkin Ooey Gooey Cake!! It’s almost like a Salted Caramel Apple Dump Cake or Peach Dump Pie, but simply in reverse. The cake mix is on the bottom rather than the top but the deliciousness is simply no different. The best thing about this cake is that it’s so versatile. Feel free to turn it into a flavor of your choice with endless experimentation! Chocolate, pineapple, banana!!! The options are endless!!

Did you know that pumpkin is technically a fruit? Go figure, right?!?!? To keep things simple; anything with a seed bearing structure would be considered a fruit. You may not have known that additionally, avocado, beans, pea pods, corn kernels, cucumbers, olives, peppers, and tomatoes are also considered fruit.  Ahaaaaa!

When we accepted Jesus in our hearts, the seeds of all the fruit of the Spirit were planted inside of us. Therefore, love, joy, peace, patience, kindness, goodness, faithfulness, gentleness, and self-control already reside within us.  – Galatians 5:22-23 (NLT). When we operate by the Spirit of God, we can supernaturally overcome anything that would come against the operation of the fruit of the Spirit. And as we get pray and get into the Word of God, the Lord will develop and mature those seeds within us. Just fruit for thought today!!! Say Grace and enjoy!! 🙂

Ingredients
  

  • Cake Layer
  • 1 box spice cake mix
  • 1 egg room temp
  • 1 stick unsalted butter melted
  • Pumpkin Ooey Gooey Filling
  • 1 8-ounce package cream cheese, room temp
  • 1 can pumpkin
  • 3 eggs room temp
  • 1 teaspoon vanilla extract
  • 1 stick unsalted butter melted
  • 2 cups powdered sugar sifted
  • 2 teaspoons pumpkin pie spice
  • Salted Caramel Goodness
  • Pecans tasted, garnish
  • Whipped Cream garnish

Instructions
 

  • Mix cake ingredients. Press into 9x13 pan.
  • Mix cream cheese and pumpkin until smooth. Add eggs, vanilla and butter. Mix. Add sugar and pumpkin spice. Mix well.
  • Pour over crust and bake at 350 for 35-40 min. Should be jiggly in the center.
  • Allow to cool for a bit and serve with Salted Caramel Goodness, toasted pecans and whipped cream. Say Grace and enjoy!!

    Oh my sweet goodness!!!! I had the pleasure of being one of the 1st to try This dessert and all I can say is “Say Grace nailed it!!”
    This dessert was outstanding!!!
    The taste,texture and the combination of the salted caramel had me craving for more!!! This is a must for the holidays or any day!
