PB&J Waffle Sandwiches

These PB&J waffle sandwiches are such a fun spin on the classic and comforting childhood peanut butter and jelly sandwich!

PB&J Waffle Sandwiches

Oh the memories! I remember a period in my life where I ate a peanut butter and jelly sandwich DAILY! It was a comfort food for me and it wasn’t just any kind of peanut butter. It had to be JIF Crunchy Peanut Butter!! Not smooth but crunchy! I guess my mom contributed to my love of crunchy peanut butter. Every dessert or sweet bread she made just had to have nuts in it or it wasn’t it’s best. We certainly love a good crunch in almost everything! So it’s Peanut Butter and Jelly Day and I’m doing a slight spin on the classic sandwich where I combined my two loves of puffed pastry, PB & J and , oh yeah, threw in a waffle iron to create  yummy pb&j waffle sandwiches!

PB & J Waffle Sandwiches

Start by combining 1/4 cup of strawberry preserves with 1 T. of water in a saucepan over medium low heat until smooth. Then roll out one thawed puffed pastry sheet and cut width wise to create 2 pieces of puffed pastry. Spread 3 T. of crunchy peanut butter on one side of the rectangle leaving a 1/2 inch border on all sides, then spread 2 T. of preserves on the other side leaving a 1/2 inch border on all sides. Now, wet your fingers to moisten all of your borders. Fold one side on top of the other to create your sandwich and press all sides to create a nice seal. Repeat this process for the second sandwich. This is very important as you don’t want to make a big mess on your iron. I vote for a smaller mess. It’s still worth it. Spray your preheated waffle iron with oil spray and place your sandwich on the waffle iron. Cook for about 8 minutes and the sandwich is golden brown and crisp. Remove from the iron, garnish with strawberries, pour strawberry preserves over pb&j waffle sandwiches and  then add a dallop of whipped cream. Say Grace and enjoy!

Ingredients
  

  • 1/4 cup strawberry preserves

  • 1 puffed pastry sheet thawed
  • 6 T. peanut butter crunchy or smooth
  • 1/4 cup strawberry preserves
  • strawberries sliced for garnish
  • whipped cream garnish

Instructions
 

  • Combine strawberry preserves with water in a saucepan over medium low heat until smooth.

  • Spread 3 T. crunchy peanut butter on one side of the rectangle leaving a 1/2 inch border on all sides, then spread 2 T. preserves on the other side leaving a 1/2 inch border on all sides.
  • Now, wet your fingers to moisten all of your borders.
  • Fold one side on top of the other to create your sandwich and press all sides to create a nice seal. Repeat this process for the second sandwich.
