Combine strawberry preserves with water in a saucepan over medium low heat until smooth.
Roll out one thawed puffed pastry sheet and cut width wise to create 2 rectangle pieces of puffed pastry.
Spread 3 T. crunchy peanut butter on one side of the rectangle leaving a 1/2 inch border on all sides, then spread 2 T. preserves on the other side leaving a 1/2 inch border on all sides.
Now, wet your fingers to moisten all of your borders.
Fold one side on top of the other to create your sandwich and press all sides to create a nice seal. Repeat this process for the second sandwich.
Spray your preheated waffle iron with oil spray and place your sandwich on the waffle iron.
Cook for about 8 minutes and the sandwich is golden brown and crisp.
Remove from the iron, garnish with strawberries, pour strawberry preserves over sandwiches and then add a dallop of whipped cream. Say Grace and enjoy!
