These tasty Paleo Lemon Blueberry Pancakes are gluten free, grain free, dairy free and sure to please even the finickiest eater!!

Paleo Lemon Blueberry Pancakes

So if you haven’t noticed, I’ve been posting a lot of gluten free and grain free recipes lately. One of the reasons is because I tend to feel better when I don’t eat gluten. My MRT blood test also found a kamut (a healthier form of wheat) and a yeast sensitivity so the digestive issue makes perfect sense. Since I found out about being gluten-intolerant, I have quickly become that most annoying person that asks if there are any gluten free options. 🙂 I’ve been reading that the application of pesticides is what tends to make us develop food sensitivities. Once we have cleared the sensitivity, some foods can be added back in as long as they’re certified organic from a trusted source. Have any of you guys heard of this theory?

Paleo Lemon Blueberry Pancakes

So in my efforts to remain gluten free for the time being, I present these delicious Paleo Lemon Blueberry Pancakes. I have an affinity for the lemon blueberry combination if you remember my Lemon Blueberry Pancake Poppers. Even though these Paleo Lemon Blueberry Pancakes are gluten free, grain free and dairy free, they are VERY FAR from taste free. Most can’t even tell the difference. In an effort to keep things convenient and easy, I used a Bob’s Red Mills Paleo Baking Flour mixture. This particular flour mixture combines almond flour, arrowroot, coconut flour and tapioca flour making a paleo breakfast a cinch!!

In all thy ways, acknowledge Him and He shall direct thy path” Trusting God is simply believing that He loves you and wants the best for you. It’s believing that He’s good, that He has the power to help you, that He wants to help you, and that He will help you. If you’re finding yourself in a position in which you’r worrying about what to do in a particular situation, begin to trusting God more on it. Know that He has the perfect plan/solution just for you to see you through.  Say Grace and enjoy!!

Ingredients
  

  • 1 cup Bob's Red Mill Paleo Baking Flour
  • 3/4 tsp baking soda
  • 1/4 tsp Salt
  • 2 eggs
  • 1/2 c. almond milk
  • Zest of 1 lemon
  • 1/2 lemon juiced
  • 1 T. coconut oil melted
  • 2 tsp maple syrup
  • 1/2 tsp Say Grace Vanilla Extract
  • 1/2 pint blueberries

Instructions
 

  • Preheat skillet to medium heat.
  • In a small bowl, combine Paleo Baking Flour, baking soda, and kosher salt.
  • In a large bowl, whisk together eggs, 1/2 cup almond milk, lemon zest, lemon juice, coconut oil, maple syrup, and vanilla extract.
  • Add flour mixture and whisk thoroughly. Batter should be pourable.
  • Add blueberries and stir.
  • Scoop 2 ice cream scoops of batter onto the preheated skillet. Cook for about 4 minutes, then flip and continue to cook for 3 minutes. Repeat until all batter is used. Say Grace and enjoy!

    Hi Felesha; those pancakes look awesome! The Paleo Baking Flour looks like something I’ll be trying to get a hold of very soon. I’ve made pancakes using a mixture of almond and coconut flours, before, and they came out great, but I didn’t make blueberry pancakes, so I’m going to have to give your recipe a try; subbing in sugar free maple syrup for the regular maple syrup, to keep the carb count even lower. Thanks for another great recipe!

    Hi there! Gorgeous photos. There’s a few key memories for me about pancake breakfasts. Especially with blueberries! To me it says celebration, connectedness, and family! We love Saturday a.m. pancake breakfasts and especially more on holidays!
    Love the combo and ease of using an already made flour mix. Wondering if you have issues with pancakes just not quite keeping you full until lunch? We seem to get full quickly at breakfast. It then hungry not long after. We usually pair with eggs and protein like turkey bacon or something. Do you think this flour combo,being that it has more nutrients and a diverse source of ingredients, would be more filling? If not the flour, any tips for a more fulfilling pancake breakfast?

      Thanks Moriya!! This baking mix is made partially of almond flour so they have more protein than the average baking mix, which should help to keep you fuller for a longer period. Let me know if you try these yummy pancakes!! We love ’em!:)

    I want to try these, they look so good! I was wondering if you don’t have access to the Bob Mills flour, what combination of almond and coconut flours I would use to get the same as the pre-made?

      Hi Suzanne! Bob’s Red Mill Paleo Baking Mix combines almond flour, arrow root starch, coconut flour and tapioca flour. You might try A Calculated Whisk’s Paleo Flour Blend here. Hope this helps!!

    One serving is 4 pancakes, am I correct? Also about how many pancakes does this recipe make? I’m thinking about meal prepping for breakfast. Anything with lemon and blueberry…..yes please!

    These are so tasty! Wow! But I’m doing a 1200 calorie diet and I’m curious to know how many are just in an average size pancake? I see it says 1 gram=292 so of a pancake has 50 grams … that’s an outrageous amount of calories and more than anyone needs. I saw on here someone asked what a serving is and you said one pancake, so is it one pancake=292 calories? Sorry just trying to understand! These are heavenly and I don’t want to have to give them up EVER!

      The Paleo Baking Mix has quite a few calories. Maybe try making your pancakes a wee bit smaller. Glad you enjoy them Keyla!!!

    I just made these for breakfast this morning. They were delicious! I have tried making paleo pancakes on a few occasions without success. These came out perfectly pancake-y! Wonderfully light and fluffy. I was worried that the lemon flavor would be overwhelming, but it wasn’t at all. Normally I drown my pancakes in syrup, but these didn’t need much, if anything. They were flavorful on their own. Thanks so much for the recipe! It’s a keeper in my house.

    I’m curious if this recipe can be made with Almond Flour and coconut milk rather than the almond milk and gluten free flour? I don’t have those ingredients but do have Almond Flour and Coconut Milk? I have everything else to make this and the picture alone is making my mouth water!
    My hubby and I just started eating more Paleo and we miss out Sunday morning Pancake breakfasts, I stumbled upon this recipe and so want to try it!

      Hi Renae! I haven’t tested it that way but almond flour alone makes goods fall apart because they are so moist. The addition of the coconut flour soaks up some of that moisture so that you have a more stable pancake. Hope you’ll try these as is!!

    Worst recipe I ever followed–how can 1 cup paleo flour be moistened by 1/2 c. almond milk, 2 eggs 1/2 lemon juiced 2 tsp maple syrup EVER to be able to be pourable. I used another whole cup of almond milk and it still was too thick to pour. What a waste of good organic blueberries.

      Hi Ann! I’m sorry that this recipe didn’t work for you. I’ve made it several times and my Jackson loves them. I will say that this batter is on the thick side and I use an ice cream scoop to put the batter on the griddle as suggested in the recipe.
