Grilled steak, sweet peppers and spicy jalapeno are piled on crunchy tortilla chips and then drenched in a cheesy ale based Mornay sauce.
Happy Friday Guys! Today, I’m enjoying the awesome BlogHer Food ’15 Conference in the Windy City of Chicago! Yep, there’ s an entire conference dedicated to food bloggers and I’m meeting some creatively talented gals and gents that share my passion for good food! However, when I discovered that National Nachos Day was upon us, the Tex-Mex foodie in me just had to check in with you to tell you about these delicious Grilled Steak Fajita Nachos. Did you know that steak is loaded with health benefits by the way?!?!? SCORE!!!
Nachos are probably #1 on my list when it comes to Tex-Mex. They are my go-to every time I step foot into any Qdoba across the Midwest. Oh how the possibilities are endless when it comes to that pile of deliciousness on top of crunchy tortilla chips. This easy recipe in particular includes grilled sweet bell peppers, jalapenos, and T-Bone steak with an ale-based cheesy goodness mornay sauce. They were pretty difficult to step away from! I kept hearing my Aunt Gail say, “Step awaaaaay from the nachos!”
The best part about nachos is that nothing is off limits. Pile on whatever you want as high as you want…until your heart and/or stomach is/are content! Make it your very own. I love being able to celebrate one another’s differences and preferences. Enjoy who God has created YOU to be! How boring would the world be if we were yet all the same. His Word states, “Thy hands have made me and fashioned me: give me understanding, that I may learn thy commandments.” Psalm 119:73 (KJV). Hallelujah! Do you as no one else can do that any better! Grilled Steak Fajita Nachos
Ingredients
- 1 lg. t-bone steak
- 1/2 tsp. kosher salt
- 1/2 tsp. pepper
- 1/2 tsp. cumin
- 1/2 tsp. garlic powder
- 1 red bell pepper
- 1 yellow bell pepper
- 1 orange bell pepper
- 1 jalapeño pepper seeding is optional
- Cheese Sauce
- 3 T. butter
- 3 T. flour
- 1/2 c. milk
- 12 oz. ale
- 2 c. Gouda cheese shredded
- hot sauce optional if not seeding jalapeno
- tortilla chips
- cilantro garnish
Instructions
- Place peppers on a grill or directly on an open flame on the stove top and roast until slightly charred. Remove from grill and cut into slices.
- Season both sides of t-bone with the salt, pepper, cumin, and garlic powder. With the heat on medium-high, sear the steak on a grill or in a grill pan for about 5 minutes on each side.
- In a medium pot, add butter. Melt over medium to high heat, and add flour and cook it for about a minute.
- Whisk in milk and ale then bring it to a boil.
- Wait for the mixture to thicken and remove the pot from the heat and add in cheese mixture.
- Add dashes of hot sauce here if desired.
- Place tortilla chips in a skillet and warm in the oven at 350 for a couple minutes or until chips are heated,
- Place peppers and steak strips over the chips.
- Spoon the cheese sauce over the chips, meat and peppers.
- Garnish with cilantro if desired. Say Grace and enjoy!
