Place peppers on a grill or directly on an open flame on the stove top and roast until slightly charred. Remove from grill and cut into slices.
Season both sides of t-bone with the salt, pepper, cumin, and garlic powder. With the heat on medium-high, sear the steak on a grill or in a grill pan for about 5 minutes on each side.
In a medium pot, add butter. Melt over medium to high heat, and add flour and cook it for about a minute.
Whisk in milk and ale then bring it to a boil.
Wait for the mixture to thicken and remove the pot from the heat and add in cheese mixture.
Add dashes of hot sauce here if desired.
Place tortilla chips in a skillet and warm in the oven at 350 for a couple minutes or until chips are heated,
Place peppers and steak strips over the chips.
Spoon the cheese sauce over the chips, meat and peppers.
Garnish with cilantro if desired. Say Grace and enjoy!
