Grilled Steak Fajita Nachos

Grilled steak, sweet peppers and spicy jalapeno are piled on crunchy tortilla chips and then drenched in a cheesy ale based Mornay sauce.

Ingredients
  

  • 1 lg. t-bone steak
  • 1/2 tsp. kosher salt
  • 1/2 tsp. pepper
  • 1/2 tsp. cumin
  • 1/2 tsp. garlic powder
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1 jalapeño pepper seeding is optional
  • Cheese Sauce
  • 3 T. butter
  • 3 T. flour
  • 1/2 c. milk
  • 12 oz. ale
  • 2 c. Gouda cheese shredded
  • hot sauce optional if not seeding jalapeno
  • tortilla chips
  • cilantro garnish

Instructions
 

  • Place peppers on a grill or directly on an open flame on the stove top and roast until slightly charred. Remove from grill and cut into slices.
  • Season both sides of t-bone with the salt, pepper, cumin, and garlic powder. With the heat on medium-high, sear the steak on a grill or in a grill pan for about 5 minutes on each side.
  • In a medium pot, add butter. Melt over medium to high heat, and add flour and cook it for about a minute.
  • Whisk in milk and ale then bring it to a boil.
  • Wait for the mixture to thicken and remove the pot from the heat and add in cheese mixture.
  • Add dashes of hot sauce here if desired.
  • Place tortilla chips in a skillet and warm in the oven at 350 for a couple minutes or until chips are heated,
  • Place peppers and steak strips over the chips.
  • Spoon the cheese sauce over the chips, meat and peppers.
  • Garnish with cilantro if desired. Say Grace and enjoy!
