A simple, flavorful yet healthy summer veggie side dish!

Grilled Summer Veggies

Aren’t you super excited about the summer season?!?! The sun is bright and the weather is just beautiful! It’s perfect for grilling just about everything, including summer vegetables. Have you had your veggies today? I have got the simplest, tastiest grilled summer veggie recipe to share. You won’t believe how easy it is and they’re sure to make multiple appearances to your cookouts this season. I combine bright summer squash, vibrant zucchini, tender asparagus, sweet peppers and onions with a conveniently bottled salad dressing (don’t judge me :)) and any basic seasoning to create a healthy yet flavorful side dish.

Start by slicing 2 large summer squash and 2 large zucchini into 1/4 inch slices; then into half moon shapes. Cut two red bell peppers and one orange bell pepper into 3/4 inch bite sized chunks. Repeat with your one sweet yellow onion. You basically just want to make sure that all of the veggies are just abut identical in size to ensure even cooking. Now to prep the fresh bunch of asparagus, you want to make sure t0 rid the woodsiest part of the stem. It’s simple…no need to guesstimate with this process. Start by holding the entire spear with two hands and run them down to the end and snap it. Wherever it snaps is where the woodsy piece ends. Discard the end and cut the rest of the spear into one inch pieces. Toss all the veggies into a food storage bag and pour in an entire bottle of Wish-Bone Italian Robusto salad dressing along with 2 T. of salt free all purpose seasoning. My favorite is the Kirkland (Costco) brand Organic No-Salt Seasoning. I love this stuff and I put it on just about everything to kick it up a notch. 🙂 Now let’s shake, shake, shake to combine all of the summer veggies with the dressing and seasoning. Toss it in the fridge for about four hours to allow the veggies to soak up all that robust wonderful flavor. Get a medium heat flame going on your charcoal or propane grill and place a grill basket over your grill grate and toss your veggies in. Grill the summer veggies for about 9-12 minutes over the flames, tossing and stirring every 3 to 4 minutes. Remove just before they go limp as you want to make sure they still have a nice crunch to the inside texture.  Say Grace and enjoy!

Ingredients

  • Grill the veggies for about 9-12 minutes over the flames, tossing and stirring every 3 to 4 minutes. Say Grace and enjoy!

    I love my grilled vegies on the bbq.I like your list of ingredients and also find bell peppers and eggplant (aubergine) are also good.

    A great way to get kids to eat their veggies.

    I love grilling some veggies during the summer time. We don’t get many opportunities to do so during the summer because there’s usually a burn ban in effect, but when there’s not one: I grill veggies! I can’t wait to try your recipe out!
