These rich sweetie buns are stuffed with sweet potato and cream cheese filling then drenched in buttery salted caramel and toasted walnuts.

Happy National Dessert Day Guys! A day (An excuse) to forget about calories and enjoy all things richly decadent, right? Are you with me? Sweet! No pun intended. Ok. Here’s yet another Salted Caramel dessert for you to enjoy! By now, you know this confection is just a fave of mine and it’s always on the forefront of my mind as I dream about it OFTEN! I hope you’ve started to try them! Feel free to chime in at any time! 🙂 Don’t be shy! Let me know what you really think of them.

Salted Caramel Sweetie Buns

These delicious Salted Caramel Sweetie Buns right here are meant to be enjoyed for dessert or even might I say breakfast! Imagine a caramel nut bun on FLEEK! Hubby actually described it as an explosion on the taste buds. The creamy cheese coupled with the fall harvested sweet potato (notably sweeter than the spring/summer harvest BTW), the buttery salted caramel and the crunch of the toasted walnuts makes this dessert a LIVE party in the mouth!  {clears throat} Excuse the run on as they get me so excited! Take them to your next gathering as they are sure to steal the show! BTW…The use of sweet potato makes these completely healthy, right? 🙂

Salted Caramel Sweetie Buns

Ingredients
  

  • 12 sweet dinner rolls sliced in half
  • Sweet Potato Filling
  • 1 c. baked mashed sweet potato
  • 2 T. butter softened
  • 2 T. brown sugar
  • ¼ c. whipping cream
  • 1 tsp. vanilla
  • 2 tsp. cinnamon
  • ¼ tsp. nutmeg
  • Cream Cheese Filling
  • ½ c. cream cheese
  • ¼ c. powdered sugar
  • 1 tsp. vanilla
  • Salted Caramel Sauce
  • 1 cup of granulated sugar
  • 6 T. salted butter
  • ½ cup whipping cream
  • 1 tsp. sea salt or fleur de sel
  • ½ c. walnuts toasted, chopped

Instructions
 

  • Preheat oven to 350 degrees.
  • Make the Salted Caramel - Pour sugar in a medium saucepan over medium-high heat. Whisk until the sugar has completely melted. Allow the sugar to get nice and bubbly brown.
  • As soon as your sugar turns that beautiful deep amber caramel color, add the butter and whisk until your butter has melted.
  • Turn off your burner and add the whipping cream
  • Whisk until all of the half and half has been combined.
  • Add the sea salt and stir.
  • In a small bowl, combine the sweet potato, butter, brown sugar, whipping cream, vanilla, cinnamon and nutmeg with an electric mixer.
  • In another small bowl, combine the cream cheese, powdered sugar and vanilla and beat well.
  • Put the bottom half of each bun in a 9X9 casserole dish.
  • Top each bottom bun with 1 T. of the sweet potato mixture, about 1 tsp. of the cream cheese mixture and finally the top half of each bun.
  • Pour all of the salted caramel over the tops of the buns and sprinkle with the toasted walnuts.
  • Place the casserole in the oven for about 15 minutes to heat through. Say Grace and enjoy!

    These were so scrumptious….very moist and the flavor of the sweet potatoe and salted Carmel blended together just right. Am going to make these for Thanksgiving Day morning for everyone?. I rate this a 5 star rating!!!!
