Unbelievably spectacular red velvet waffles bathed in a delicious cream cheese icing get topped with guiltless yet crispy oven fried chicken!
Hey there, Guys! It’s me checking in again this week right in time for Valentine’s Day! I’m loving this new posting schedule by the way. It gives me time to just breathe and not be so consumed with forcing new content just to have content. Quality over quantity, right! You know my day job keeps me pretty busy with traveling what feels like the globe! Oh and the boyfriend (hubby) needs some lovin’/attention too, right?
Speaking of lovin’, I’m coming at you with a fun and delicious breakfast to start your Valentine’s Day off just right! This Oven Fried Chicken & Red Velvet waffles dish will definitely put some pep in your step this upcoming Valentine’s Day. I’m looking forward to spending some alone time with him given the hustle and bustle that life throws at us. Then we’re going to enjoy an Italian cooking class together at Sur la Table for a fun twist on date night! Super excited to just be with him as I love me some him! Ok. Before I get too hot and bothered, let’s get back to the subject at hand…Oven Fried Chicken & Red Velvet Waffles! I absolutely love this kind of dish in any form. It’s the sweet and salty elements of the dish that make it work so well together. If you haven’t already tried my Salted Caramel Chicken & Waffles, I suggest that you get on this combo train and enjoy the ride! This particular dish is slightly {with the emphasis on slightly} lightened up with Oven Fried Chicken. Yep! The oxymoronic Oven Fried Chicken, guys! This yummy chicken is coated in flour and crushed seasoned croutons which makes a crispy-crunchy texture even inside the oven. SCORE!! The key is baking the chicken on top of a cookie rack so that the crunch is not lost even on the very bottom. Hooray for crunchiness and flavor without the guilt, right?!?! 🙂
Now on to these richly decadent red velvet waffles!! I make a Belgian waffle with virtually the same ingredients that I use to make these Red Velvet Cupcakes In A Jar. I combine flour, buttermilk, cocoa, sugar, vinegar and melted butter. Oh and let’s not forget the egg separation experiment! What makes these waffles obtain the perfect crispy texture on the outside with a soft and fluffy middle is by separating the egg yolks and whipping the egg whites until soft peaks form. Once you’ve reached this texture, they get folded into the batter creating these light and fluffy little air pockets! Cook them up in a Belgian waffle iron and oh my yum!!!! The addition of the ooey gooey cream cheese icing and crunchy toasted pecans just takes this dish right over the cliff! I just can’t stop daydreaming about them! Served with the crunchy oven fried chicken, this pair is certainly a love story to remember! So enjoy this yummy oven fried chicken & these red velvet waffles with your loved one this weekend! Oven Fried Chicken & Red Velvet Waffles
Ingredients
- Oven Fried Chicken
- 6 chicken drums almost 2 lbs.
- 1 c. buttermilk
- 1 1/2 tsp. Old Bay
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1 c. flour
- 1 T. cornstarch
- 1 1/2 tsp. kosher salt
- 1/2 tsp. white pepper
- 1 egg beaten
- 5 oz bag seasoned croutons crushed
- Oil Spray
- Red Velvet Waffles
- 2 c. flour
- 1/3 c. sugar
- 1 T. cocoa powder
- 1/2 tsp. kosher salt
- 1 tsp. baking soda
- 1 1/2 tsp. baking powder
- 1 and 3/4 c buttermilk room temp
- 3 eggs room temp, separated
- 1/2 tsp. vinegar
- 2 tsp. vanilla
- 2 T. red food coloring
- 1/2 c. melted butter
- Cream Cheese Icing
- 8 oz. cream cheese room temp
- 4 T. butter cold
- 2 c. powdered sugar
- 1 tsp. vanilla
- 1 c. milk
- 1 c. pecans toasted, garnish
Instructions
- Oven Fried Chicken - Preheat oven to 425 degrees.
- Whisk old bay, garlic powder and onion powder into buttermlk.
- Place drums in large freezer bag and pour buttermilk mixture over them.
- Place the drums in a bowl and store in fridge overnight.
- The next day, in a shallow pan, mix together flour and cornstarch.
- In another shallow pan, place the beaten egg.
- In the third shallow pan, place the crushed croutons.
- Remove each drum from the bag and roll them in the flour mixture. Shake of the excess flour.
- Place each drum in the beaten egg and coat.
- Now place each drum in the croutons and coat well.
- Place the prepared drums on a wire rack fitted inside a cookie sheet.
- Spray the drums with oil spray.
- Baked for 30 minutes or until the internal temperature reaches 165 degrees.
- Waffles - While the chicken is baking, preheat waffle iron.
- In a medium bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In another medium bowl, whisk together the buttermilk, egg yolks, vanilla, and vinegar until well-combined. Add food coloring and mix well.
- Pour buttermilk mixture into dry ingredients and stir until combined.
- Pour in melted butter and stir.
- In a small bowl, beat the egg whites on high until soft peaks form (2-3 minutes).
- Fold the egg whites gently until combined.
- Cook waffles according to your iron and size. My Belgian waffle maker took a few minutes.
- Icing - Beat the cream cheese and butter until fluffy.
- Add the powdered sugar and combine.
- Add the milk and stir. You should have the consistency of a pourable syrup.
- Assemble the dish to your liking and garnish with toasted pecans, Say Grace and enjoy!
