Sweetened tender cornbread combined with roasted sweet potato and spices make these mini sweet potato muffins a pretty close match to the original.
There’s a local soul food restaurant called Beans & Cornbread that hubby and I frequent. They have good food but I must admit that my very favorite thing on the menu is the starter, those Sweet Potato Cornbread Muffins. They’re usually accompanied with a basic cornbread but we always ask for them to bring the sweet potatoes ones all by their lonesome. Then multiple refill requests ensue until the meal arrives and then we always need a few to go. 🙂 I’ve even visited just for the sweet potato cornbread muffins alone. Ok. I know this sounds cray, cray but it’s not entirely as I’ve heard the same sentiments from others. They’re just that great!
I love ’em because they’re tender and sweet. They’re almost like a Jiffy-based cornbread filled with chunks of mashed sweet potato and delicious fall spices. No side eyes please but…I grew up on sweetened cornbread. With my hair in a super cute top-knot, I used to always run through the house with a fresh baked yummy sweetened cornbread muffin!! These muffins were like cake to me and very hard to resist might I add! Hence, my childhood nickname, Muffin. Thank you Auntee Gail! She still uses it today…EVEN IN PUBLIC! Imagine the faces, when strangers recognize that she’s referring to a 39 year old WOMAN! LOL! Still love her to pieces in spite of those short-lived embarrassing moments! 🙂
Ok. Where were we? Oh, yes. I decided that since I love ’em so much that I’d take a stab at recreating them at home. I started with a buttermilk cornmeal mix and added sugar, pumpkin pie spice, eggs, roasted mashed sweet potato, sour cream, butter and honey. Ummm boy! They are simply delightful and might even be tastier than the original. Myself and the family are biased so we’ll let you be the judge. Be sure to let me know if they’re a contender!
Soooo…yet another copycat here on the blog! I’ve been doing that a lot lately, right. There’s a saying that to copycat is the highest form of flattery, right? I guess but it reminds me of the scripture that states, ” 2 And be not conformed to this world: but be ye transformed by the renewing of your mind, that ye may prove what is that good, and acceptable, and perfect, will of God.” Romans 12:2 (KJV). It basically encourages us to be copycats of God and not others…to allow Him to change the way we think and to get in line with His perfect will for our lives. And this, my friends can only be accomplished through much prayer and also through the reading of His Word. Let us imitate the Father, guys! Say Grace and enjoy! 🙂
Sweet Potato Muffins {Beans & Cornbread Copycat}
Ingredients
- 1 c. cornmeal mix
- 1/2 c. sugar
- 1 tsp. pumpkin pie spice
- 3 eggs
- 1 c. roasted mashed sweet potatoes
- 1/2 c. sour cream
- 6 T. butter melted
- 2 T. honey
Instructions
- Preheat oven to 425 degrees.
- Line mini muffin pans with muffin liners
- In a medium bowl, combine cornmeal mix, sugar and pumpkin pie spice.
- In a separate bowl, combine sweet potatoes, eggs, sour cream, butter and honey.
- Add the sweet potato mixture gently to the cornmeal mixture, stirring just until moistened.
- Bake for 8 minutes or until an inserted toothpick comes out clean.
- Serve immediately. Say Grace and enjoy!

Ages since I went to Beans n Cornbread. Made these today ..to die for..I did overbake em..my mistake! I used 1 box of jiffy n 1 bag of steamable sweet potato n also a splash of vanilla. Already have popped 3 or 4..so good..yum! Thanx.
