Hey Folks! Happy Banana Bread Day! As I’m writing this, I’m sitting on the tarmac just waiting for my plane to leave for Seattle. I’m heading to a sales meeting for a new product launch. Gotta love those, right? I am excited however to visit Seattle as this is my first time and my only experience with it thus far is the classic movie, Sleepless in Seattle on the world famous houseboat where Sam watched the fireworks over the beautiful city. Love that movie by the way!!

When it comes to banana bread , I’m pretty picky. Hubby too! It needs to be dense, moist and full of flavor. I’ve had so many that are just dry and completely tasteless. I’m sure you’ve eperienced the same at some point in time. So in my search efforts, I turned to friend in my head, Sally of Sally’s Baking Addiction. She’s come up with the best recipe in my opinion. The key too to moisture is packing the bread with lots of baking bananas…4 large ones to be exact and thick, creamy yogurt. This is the same concept in my moist Chocolate Chip Zucchini Cake where lots of zucchini and in this case canola oil creates the moisture in this tasty cake.

Of course, I couldn’t make this banana bread without my dear buddy, chocolate coming to the party! Its kind of the life of the party if you chocolate lovers know what I mean and it pairs so well with bananas. I just love chocolate covered bananas. What about you? I invited pecans as well because I kept hearing momma ask, “Did you put any nuts in there?” Have you noticed by the way that pretty mu ch all of my baked goods at e packed with nuts? I was just raised that way. It’s the very meat of a baked good in our opinion so it’s IMPERATIVE to include them. I finished the bread with even more decadence by glazing it with a smooth and delicious chocolate ganached. Oh my YUM!! You’ve gotta try this banana bread as it got rave reviews all around.

Speaking of “Sleepless” in Seattle…are you experiencing sleepless nights due to worry and concern? I just want  to remind you that the Word says to cast all of your cares on Him for He cares for you. 1 Peter 5:7 (NLT). Those worries and concerns don’t belong to you. Give them to God and get some rest. His Word also states that He’ll give you sweet sleep. Proverbs 3:24. My hubby always tells me that I don’t have a care in the world because I sleep just like a log and he’s exactly right for I know that God’s got my/our back! 🙂  So sleep sweetly tonight guys after you’ve had a slice of this Chocolate Chip Banana Bread. Chocolate Chip Banana Nut Bread with Chocolate Glaze

Ingredients
  

  • 1/2 c. unsalted butter room temperature
  • 3/4 c. light brown sugar
  • 2 eggs room temperature
  • 1/3 cup Aussie vanilla bean yogurt
  • 2 c. mashed bananas about 4 bananas
  • 1 tsp. vanilla
  • 2 c. flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 c. semi sweet chocolate chips
  • 3/4 c. pecans toasted
  • 1 T. flour to toss chocolate chips and pecans
  • Chocolate Glaze
  • 1/2 c. heavy cream
  • 1/2 c. semi sweet chocolate chips
  • 1 T. light corn syrup

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray a 9x5 loaf pan with Baker's Joy. Set aside.
  • Cream the butter and brown sugar together with a hand mixer on medium speed.
  • Add the eggs one at a time.
  • Blend in the yogurt, bananas and vanilla on medium speed for a minute.
  • Combine the flour, baking soda, salt, and cinnamon together in a medium bowl.
  • Mix the dry ingredients into the wet ingredients.
  • Toss the flour with the chocolate chips and toasted pecans and then fold into the batter.
  • Pour the batter into the prepared baking pan
  • Bake for 70 minutes or until inserted toothpick come out clean.
  • Cool completely in the pan on a wire rack.
  • Chocolate Ganache - Bring heavy cream to a simmer over low heat.
  • Place chocolate into a small bowl adding the heavy cream and corn syrup.
  • Allow the hot cream to melt the chocolate for about a minute.
  • Stir until completely combined and smooth. Allow glaze to sit for about 10 minutes.
  • Pour glaze over the entire bread loaf . Say Grace and enjoy!!

    Great pictures and your banana bread looks very moist. It’s nice to find a fellow Michigan blogger, I live in Saginaw. This bread would be real nice to have during what’s expected to be a huge snow storm coming our way.
