Ok, ok!! I heard you loud and clear in the survey!! You want healthier meals done in 30 minutes or less. It’s clear to me that the busyness of life kind of dampers some of your creativity in the kitchen especially when it comes to making healthier choices. Now this doesn’t mean that I’ll be neglecting cooking some of my favorites here, like cheesy and chocolatey goodness {all things in moderation, right}…I’ll just be sure to incorporate some healthier yet tasty options that the entire family will love. I’m also in the middle of developing a mini eCookbook that will strictly focus on healthier 30 minute meals. So look for that to come as well!
Today, I wanted to make an introduction to the delicious smoothie bowl if you haven’t heard of them already. They’re definitely all the rage in the world of healthier options. I was introduced while I was on the road in Indianapolis a few weeks ago. I literally stumbled upon this place called Vitality Bowls Superfood Cafe. I walked in, stared at the menu and still had to ask the girl at the front of the line, “What is it?” She explained that it was a thickened smoothie in a bowl with lots of delicious toppings. Got it!!! You know how you’ll have a smoothie through a straw and still feel as though you didn’t really eat anything because you didn’t get to chew. Yeah! I know the feeling all too well!
Acai {pronounced ah -sigh-eee} is loaded with heart healthy omega fatty acids, minerals, vitamin c and calcium. So we’ve got a great base for a yummy and nutritious dessert. I add dark chocolate, frozen bananas, frozen strawberries and a splash of coconut milk. I then top the Acai Smoothie Dessert Bowl with fresh bananas, strawberries, coconut shaving, dark chocolate chips and roasted almonds. What a dreamy bowl of goodness! It was pretty hard to stop shoveling spooning this yummy treat into my mouth. So good guys!!! So here was my first attempt at offering a healthier recipe just for you. After all, I do recognize and understand that our bodies are the temples of the Holy Spirit and that we are to honor God with them. – 1 Corinthians 6:19-20 (NLT). Say Grace and enjoy!! 🙂
Acai Smoothie Dessert Bowl {Vitality Bowls Copycat}
Ingredients
- 2 Açai Berry Puree Superfruit Packs Original Blend
- 1 frozen banana sliced
- 3 large frozen strawberries
- 1 T. dark chocolate chips
- Up to 1/4 c. coconut milk
- Toppings
- Banana freshly sliced
- Strawberries freshly sliced
- Shaved coconut
- Dark chocolate chips
- Roasted almonds
Instructions
- Blend the smoothie packs along with frozen banana, strawberries, and dark chocolate.
- Add splashes of coconut milk slowly up to 1/4 c. until creamy and thick.
- Spoon into bowl and top with sliced bananas, strawberries, coconut, chocolate chips and almonds. Say Grace and enjoy!!

This looks delicious with healthy ingredients but still a lot of sugar. The acai packets alone have 12g of added sugar, about 24% of the daily recommendation. Can you provide the nutrition breakdown of the recipe? Have you tried it with the sugar free packets and if so, how did it taste? Thanks for your time.
