Power Salad with Balsamic Chia Seed Vinaigrette

This nutritional bed of spinach topped with crunchy pistachios and pumpkin seeds, creamy avocado, and juicy goji berries gets drizzled with a healthy balsamic chia seed vinaigrette. This Power Salad is an excellent choice for your lunch today!!

- 10 oz. spinach
- 4 T. goji berries
- 1 avocado diced
- 1/2 c. shelled pistachio nuts
- 1/2 c. pepitas
- Balsamic Chia Seed Vinaigrette
- 1/4 c. white balsamic vinegar
- 1/4 c. lemon juice
- 3 garlic cloves minced
- 1/4 tsp. yellow mustard
- 1 T. chia seeds
- 1/4 tsp. salt
- 1/8 tsp. white pepper
- 1/2 c. olive oil
Combine the spinach, pistachios, pepitas, and goji berries in a large bowl.
Combine the balsamic vinegar, lemon juice, garlic, mustard, salt and pepper in a bowl. Whisk until combined.
Drizzle in the olive oil until emulsified.
Whisk well and pour desired amount of dressing over salad. Save leftover vinaigrette in the fridge for about a week. Say Grace and enjoy
