Power Salad with Balsamic Chia Seed Vinaigrette

Ingredients
  

  • 10 oz. spinach
  • 4 T. goji berries
  • 1 avocado diced
  • 1/2 c. shelled pistachio nuts
  • 1/2 c. pepitas
  • Balsamic Chia Seed Vinaigrette
  • 1/4 c. white balsamic vinegar
  • 1/4 c. lemon juice
  • 3 garlic cloves minced
  • 1/4 tsp. yellow mustard
  • 1 T. chia seeds
  • 1/4 tsp. salt
  • 1/8 tsp. white pepper
  • 1/2 c. olive oil

Instructions
 

  • Combine the spinach, pistachios, pepitas, and goji berries in a large bowl.
  • Combine the balsamic vinegar, lemon juice, garlic, mustard, salt and pepper in a bowl. Whisk until combined.
  • Drizzle in the olive oil until emulsified.
  • Whisk well and pour desired amount of dressing over salad. Save leftover vinaigrette in the fridge for about a week. Say Grace and enjoy
