Preheat oven to 400 degrees
Place thawed birria into a medium saucepan and bring to a boil over medium heat.
Place pizza crust on parchment lined baking sheet and brush both sides with olive oil. I used Olivelle Garlic Infused Olive Oil.
Brush the top of pizza crust with some of the consumme of the birria
Mix cheese together and top crust with half of the cheese
Place red onions along with chunks of the birria on pizza crust.
Cover with remaining cheese and pour more of the consumme on top. Not too much.
Top with cilantro and Jalapenos.
Place in preheated oven for about 10 minutes or until cheese is nice and ooey gooey. Remove from the oven and slice diagonally.
Serve immediately with lime wedges and leftover consumme for dipping. Say Grace and enjoy!!
