Servings 24 rolls

Ingredients

  • 1 pkg active dry yeast
  • 1/4 c water warmed to about 110°F
  • 4 c bread flour
  • 1/3 c sugar
  • 1 large egg
  • 1 tsp kosher salt
  • 1/2 stick Kerry Gold butter softened to room temp and cut into 4 pieces
  • 1 c whole milk warmed to about 120°F
  • Melted butter for brushing

Optional Honey Butter Topping

  • 2 T. melted butter
  • 2 T. honey

Optional Rosemary and Sea Salt Topping

  • 1 sprig of fresh rosemay
  • 1 tsp. Celtic sea salt

Instructions

  • Add yeast to the bottom of a stand mixer and stir in warm water until the yeast dissolves. Set aside for 10 minutes.
  • Put butter in warm milk and allow it to melt. Add sugar to milk and stir. Then add salt.
  • Add the milk mixture to the yeast mixture .
  • Beat egg and add to the mixture.
  • Add flour 1 cup at a time on the lowest speed. The mixture should ball up well.
  • Put dough in a well greased bowl covered with plastic wrap and a towel for 1.5 to 2 hours. I heat up a cup of warm water in the microwave for a couple minutes and then place my bowl in the warm microwave with the water to create a warm, steamy environment for the dough to rise.
  • Once the dough has doubled in size, punch it once to remove the air.
  • Dump your dough on a floured board and knead it for 5 minutes.
  • Roll the dough into a log and cut it in half.
  • Flatten the 2 pieces into 2 rectangles.
  • Cut each rectangle into 12 pieces and roll it into a ball. Squeeze the bottom of the ball to create a nice smooth uniform top.
  • Place 24 rolls into a 13x9 pan lines with parchment paper.
  • Allow them to rise again for 30 minutes covered with plastic wrap and a towel until beautifully puffy.
  • Preheat oven to 375 degrees.
  • After the second rise, brush the rolls with melted butter and place in the oven for 18 minutes.
  • Remove them form the oven and saturate them again with butter and/or with the optional toppings. Say Grace and enjoy!
