Mac & Cheese Soup

Ingredients
  

  • 1 c. macaroni cooked and drained
  • 4 T. butter
  • 2 shallots diced
  • 1 medium carrot diced
  • 1 stalk celery diced
  • 2 cloves garlic minced
  • 4 T. flour
  • 1/3 c. white wine
  • 2 c. low sodium chicken broth
  • 2 c. whole milk
  • 3 c. Wisconsin extra sharp cheddar cheese grated
  • cayenne pepper to taste
  • bacon chopped, garnish (optional)
  • chopped tomato garnish (optional)

Instructions
 

  • Melt butter in a heavy bottomed stockpot over medium high heat and saute shallots, carrots and celery for about 3-4 minutes. Add garlic and saute until fragrant.
  • Add flour and cook for about 1 minute.
  • Add white wine to deglaze the pan and cook for a couple minutes.
  • Pour in chicken broth and milk and whisk until thickened. You'll feel it.
  • Add cheese and stir until completely melted.
  • Add cooked macaroni and crushed pepper to taste.
  • Serve immediately. Say Grace and enjoy!!
