Balsamic Watermelon & Kale Salad

Ingredients
  

  • 3 c. cubed watermelon
  • 10 oz. baby kale
  • 2 oz. goat cheese crumbled
  • 1/2 c. walnuts toasted if you have power :)
  • 1 c. red balsamic vinegar

Instructions
 

  • Bring the balsamic vinegar to a boil in a small saucepan over medium-high heat.
  • After it comes to a boil , lower the heat to a simmer for about 10 minutes or until thickened. Remove from heat and allow to cool. Reduction will become thicker as it sits.
  • Toss watermelon,kale, goat cheese and walnuts with balsamic reduction in a large bowl. Say Grace and enjoy!!
