Mix together flaxseed meal and water, set aside for 3-5 minutes.Sift together flour, brewer's yeast, salt, cinnamon and baking soda.
In a large mixing bowl, cream together butter and sugars. Add eggs one at a time, mix well.Stir flaxseed mixture and add with vanilla to the butter mix. Beat until blended.
Sift together dry ingredients, except oats, chocolate chips and walnuts. Add to butter mixture. Stir in oats, chocolate chips and walnuts.
Using a large cookie scoop, drop onto baking sheet. Place in refrigerator for at least 1 hour or even overnight.
When ready to bake,preheat the oven to 350F. Bake for 12-15 minutes. Allow to cool slightly. Say Grace and enjoy!!
Note: You can also freeze the dough balls and bake a couple fresh cookies every day. Just increase the bake time a few minutes more. :)
