Add yeast to the bottom of a stand mixer and stir in warm water until the yeast dissolves. Set aside for 10 minutes.
Put butter in warm milk and allow it to melt. Add sugar to milk and stir. Then add salt.
Add the milk mixture to the yeast mixture .
Beat egg and add to the mixture.
Add flour 1 cup at a time on the lowest speed. The mixture should ball up well.
Put dough in a well greased bowl covered with plastic wrap and a towel for 1.5 to 2 hours. I heat up a cup of warm water in the microwave for a couple minutes and then place my bowl in the warm microwave with the water to create a warm, steamy environment for the dough to rise.
Once the dough has doubled in size, punch it once to remove the air.
Dump your dough on a floured board and knead it for 5 minutes.
Roll the dough into a log and cut it in half.
Flatten the 2 pieces into 2 rectangles.
Cut each rectangle into 12 pieces and roll it into a ball. Squeeze the bottom of the ball to create a nice smooth uniform top.
Place 24 rolls into a 13x9 pan lines with parchment paper.
Allow them to rise again for 30 minutes covered with plastic wrap and a towel until beautifully puffy.
Preheat oven to 375 degrees.
After the second rise, brush the rolls with melted butter and place in the oven for 18 minutes.
Remove them form the oven and saturate them again with butter and/or with the optional toppings. Say Grace and enjoy!
