Maple Glazed Salmon

Heart healthy salmon seared with cajun seasoning and bathed in pure maple syrup makes for an easy and delicious weeknight meal.

Ingredients
  

  • 6 6 oz. salmon fillets
  • 2 T. Cajun seasoning
  • 2 T. grape seed or canola oil
  • 1/2 cup pure Grade B maple syrup
  • 1 T. unsalted butter
  • 1 green onion divided

Instructions
 

  • Pour syrup into a saucepan and butter to the sauce pan along with the whites of a green onion and bring to a boil.
  • Reduce the heat and simmer until thickened, about 15 minutes.
  • Remove the skin the salmon fillet and cut it into 6 servings.
  • Heat a stainless steel pan on medium to high heat.
  • Make sure that each fillet is completely dry before seasoning all the pieces with Cajun seasoning. Be sure to season on both sides.
  • Now that your pan is hot, add oil to the pan.
  • In batches, cook the salmon 2-3 minutes on the first side depending on the thickness of your fillets. The salmon should now be opaque half way through.
  • Flip the salmon over to brown the other side for about 2 minutes. Once the salmon has reached 140 degrees, it's done. Be sure not to overcook.
  • Plate the salmon and glaze it with the maple syrup mixture. Garnish with the green tops. Say Grace and enjoy!
