Pressure Cooker Homemade Elderberry Syrup

This simple antioxidant packed homemade elderberry syrup is great for an immune boost for the entire family! Enjoy it on pancakes and waffles too!

  • Combine all ingredients except manuka honey in pressure cooker.
  • Set for 9 minutes on high pressure.
  • Vent pressure and strain into a large vessel.
  • Once cooled, add honey and stir until well combined.
  • To make on the stove top: Place all ingredients except honey in a large pot and bring to a boil. Reduce the heat and simmer for 45 minutes to an hour until liquid is reduced by half. Remove from the heat, allow to cool and mash the berries. Strain and pour into a vessel. After completely cool, add honey and mix well.

Notes

Children Dose: 1/2-1 teaspoon once a day except weekends
Adult Dose : 1/2-1 tablespoon once a day except weekends
During an episode: Take normal dose 2-3 times per day until symptoms are gone. 
Children under 1 should not consume honey. Feel free to use pure maple syrup instead. 
Disclaimer: I read a study that found during an active COVID infection to discontinue use because it could cause a cytokine storm and exacerbate symptoms.
Syrup can be stored in the fridge in an air tight vessel for up to 2 months. You can also freeze in ice cube trays and store in the freezer.
