This Superfood Salad is packed with 7 tasty superfoods that are sure to tantalize your taste buds and slim down your waistline.

- 1 1/2 c. cooked quinoa
- 3 c shredded red cabbage
- 8 c spinach
- 2 c blueberries
- 1/2 c chopped Brazil nuts
- 1 avocado diced
- 1 large carrot shredded
Maple Vinaigrette
- 1/4 c extra virgin olive oil
- 1/4 c pure maple syrup
- 1 garlic clove minced
- 1-2 T apple cider vinegar
- 1/4 tsp kosher salt
- 1/4 tsp coarse ground pepper
Make the salad dressing by whisking all the wet ingredients including the salt and pepper. Set aside.
Toss all vegetables and fruit into a large salad bowl. Pour dressing over and mix well. Say Grace and enjoy!!
