This Superfood Salad is packed with 7 tasty superfoods that are sure to tantalize your taste buds and slim down your waistline.

  • 1 1/2 c. cooked quinoa
  • 3 c shredded red cabbage
  • 8 c spinach
  • 2 c blueberries
  • 1/2 c chopped Brazil nuts
  • 1 avocado diced
  • 1 large carrot shredded

Maple Vinaigrette

  • 1/4 c extra virgin olive oil
  • 1/4 c pure maple syrup
  • 1 garlic clove minced
  • 1-2 T apple cider vinegar
  • 1/4 tsp kosher salt
  • 1/4 tsp coarse ground pepper


  • Make the salad dressing by whisking all the wet ingredients including the salt and pepper. Set aside.
  • Toss all vegetables and fruit into a large salad bowl. Pour dressing over and mix well. Say Grace and enjoy!!
