Preheat oven to 425 degrees.
Line mini muffin pans with muffin liners
In a medium bowl, combine cornmeal mix, sugar and pumpkin pie spice.
In a separate bowl, combine sweet potatoes, eggs, sour cream, butter and honey.
Add the sweet potato mixture gently to the cornmeal mixture, stirring just until moistened.
Bake for 8 minutes or until an inserted toothpick comes out clean.
