Paleo Brownie Cookie Recipe {Vegan}

  • 1 c. almond flour
  • 2 T. coconut flour
  • ¼ c. cocoa powder
  • ¼ tsp. sea salt
  • ¼ tsp. baking soda
  • 6 T. coconut oil, melted
  • ⅓ c. maple syrup
  • 1 egg or 1 vegan flax egg (1 T. flax meal and 3 T. water combined...allow to sit for a few minutes)
  • 1 tsp. Say Grace Vanilla Extract
  • ⅓ c. dairy free chocolate chips
  • ½ c. walnuts
  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine almond flour, coconut flour, cocoa powder, baking soda, and sea salt.
  3. In another bowl, add the coconut oil, maple, egg/flax egg. Mix well.
  4. Add in vanilla and mix well.
  5. Fold in chocolate chips and walnuts.
  6. Using a cookie scoop, make 12 cookies and place on a parchment lined cookie sheet.
  7. Bake for 10 minutes and allow to cool on the pan for 5 minutes. Remove to a cooling rack to finish cooling. Say Grace and enjoy!!
