  • 2 c. almond flour
  • ¼ c. coconut flour
  • 1 tsp.cinnamon
  • 1.5 tsp. pumpkin spice
  • 1 tsp.baking soda
  • ½ tsp. kosher salt
  • ¼ c. melted coconut oil
  • ½ c. pure maple syrup
  • 2 eggs, room temperature
  • ¾ c. canned pumpkin
  • 1 tsp. Say Grace Vanilla Extract
  • ½ c. Enjoy Life dark chocolate morsels
  • ½ c. chopped walnuts or pecans (optional)
  1. Preheat oven to 350 degrees. Line two petite bread loaf dishes with two parchment strips each.
  2. In a medium bowl, combine first six ingredients until mixed well.
  3. Add canned pumpkin, eggs, maple syrup, coconut oil and Say Grace Vanilla Extract. Mix well until everything is incorporated.
  4. Add the chocolate chips and mix well.
  5. Divide batter between the two dishes evenly.
  6. Bake for 50-55 minutes or until the center springs back from your touch. Keeps best in fridge. Say Grace and enjoy!
