Mac & Cheese Soup

A creamy mac and cheese gets converted into a hearty, comforting and yummy soup!
Serves: 6
  • 1 c. macaroni, cooked and drained
  • 4 T. butter
  • 2 shallots, diced
  • 1 medium carrot, diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 4 T. flour
  • ⅓ c. white wine
  • 2 c. low sodium chicken broth
  • 2 c. whole milk
  • 3 c. Wisconsin extra sharp cheddar cheese, grated
  • cayenne pepper, to taste
  • bacon, chopped, garnish (optional)
  • chopped tomato, garnish (optional)
  1. Melt butter in a heavy bottomed stockpot over medium high heat and saute shallots, carrots and celery for about 3-4 minutes. Add garlic and saute until fragrant.
  2. Add flour and cook for about 1 minute.
  3. Add white wine to deglaze the pan and cook for a couple minutes.
  4. Pour in chicken broth and milk and whisk until thickened. You'll feel it.
  5. Add cheese and stir until completely melted.
  6. Add cooked macaroni and crushed pepper to taste.
  7. Serve immediately. Say Grace and enjoy!!
