Momma’s Potato Salad is a great and easy addition to your next cookout, barbecue, picnic or lunch!!
With Fourth of July approaching us, I wondered what I would share with you this week. What are your plans for the holiday by the way? We’ll be cookin’ out of course!! What’s on the menu, you ask? We’re serving Oh My Lamb Loin Chops, Sweet and Spicy Baked Beans, and Grilled Summer Veggies to start. As we were menu planning, we both thought it would be a great idea to feature Momma’s Potato Salad. She even agreed to participate in this month’s demonstration video!! Yeaaa!!! So let me introduce you to my wonderful Momma here.
Now Momma hasn’t made her Potato Salad for the family in a long while although I remember it being quite popular growing up. One reason being is that hubby has never been a fan of Potato Salad. Now his tune has quickly changed after sampling Momma’s Potato Salad. She’s even been referred to as the Potato Salad Lady at church!!! So you know it’s gotta be good!!
Our favorite part of this side dish is the contrast of textures. The tender potatoes coupled with the delicious crunch of the fresh celery, onion and red bell pepper makes you wanna just cut a rug. My addition of the bacon adds a smoky element to this already delicious dish. Everybody knows my motto is that “Bacon Makes Everything Better!” Bacon or no bacon, Momma’s Potato Salad is sure to please! The fact that it comes together fairly quickly is just an added bonus!! No need to WAIT here!!
Now that I mention waiting, is your patience being challenged lately? I’m here to encourage you to recognize that God’s plan includes a better story. He knows exactly how to unfold that plan unto His Glory. Surrender to His plan and as you wait, ask Him what he’d like for you to do in this waiting period. Learn to allow God to be everything that you need in the RIGHT NOW!! Remember that faith coupled with patience inherits the promises of God. Hebrews 6:12. Say Grace and enjoy!!
Momma stops by this week to help me demonstrate her popular Potato Salad!!!
- 2.5 lbs. Yukon Gold potatoes, peeled and cubed
- 1 T. kosher salt
- 5 eggs, boiled in ½ tsp. salt water, diced
- ¾ c. sweet pickle relish
- 2 celery stalks, diced
- 1 sm. onion, diced
- 1 red bell pepper, diced
- 3 T. mustard
- 1 T. Kirkland Organic No-Salt Seasoning
- ¼ tsp. cayenne pepper
- 1 c. SECRET SAUCE Marzetti Slaw Dressing
- 8 bacon slices, cooked and chopped (optional)
- Boil potatoes in 1 T. salted water for about 8 minutes or until tender. Drain well and place in a large bowl.
- Add onion, celery, red pepper, eggs, mustard, relish, no-salt seasoning, cayenne pepper, secret sauce, and bacon if desired. Mix well and chill before serving. Say Grace and enjoy!!
